The Infernus 121.5cm heated servery puts three jobs in one mobile unit: a wet-heat bain-marie top for sauces, vegetables and mains, an overhead gantry with heat lamps behind a glass sneeze guard to keep the food hot and lit for customers, and a heated cupboard underneath for plates and back-up trays.
The top and the cupboard have separate thermostats, so each runs at its own temperature, and the gantry lights have their own switch. Sliding doors open onto two shelves, and the unit moves on braked castors with a push handle, so it can be wheeled into place for service and out for cleaning. At 121.5cm wide it suits carveries, pubs, schools, canteens and hotel service.
