The Infernus INF-6TT is a six-pot electric bain marie for holding prepared food at serving temperature through a long service. With six individual 7-litre round pots it gives you real menu breadth from one unit — soups, curries, sauces, gravies and chilli can all be held separately and served straight from the pot.
It uses a wet-heat water bath rather than dry heat, which is what keeps sauces and curries from catching or forming a skin. The water surrounds each pot and heats it gently and evenly, so food holds its texture for hours rather than degrading at the edges.
An adjustable thermostat lets you set the holding temperature for what you are running, and separate power and heating indicator lights make it obvious at a glance whether the unit is on and whether it is actively heating. At 800mm wide it is a countertop unit, so it drops onto a servery or counter without needing a freestanding installation.

Using the bain marie
Before use, fill the water well so the water level remains at least 10mm above the heating element. The bain marie should never be operated dry. Switch on and turn the thermostat clockwise to the required temperature — the red indicator shows power is on, the yellow indicator illuminates during heating and switches off automatically when the set temperature is reached. Position on a stable surface with at least 100mm clearance at the sides and 200mm at the rear.
